How to Cook Everything and How to Cook Everything Vegetarian by Mark Bittman
I can’t tell you how many dinners I’ve planned by looking at my crisper drawer and then turning to the index in one of these books. Great recipes made with real food. Also a good resource for things like figuring out how to clean leeks.
The Produce Bible by Leanne Kitchen
Great information on everything from how to pick a good eggplant to how to store zucchini. Each section includes a few recipes featuring that fruit or vegetable. Plus, lots of pretty pictures.
Food Matters by Mark Bittman
I realize this list is Bittman-heavy, but this book is great because he wrote it after he changed his diet to include a LOT more veggies. Great recipes for using up a lot of whatever you have left on Tuesday or Wednesday night, and many of the recipes come with variations, so it’s like having twice as many options.
