Tomato, Cucumber, & Onion Salad

ANUPY SINGLA, VEGAN INDIAN COOKING

  • 1 large yellow onion, peeled and diced
  • 4 medium tomatoes, diced
  • 4 medium cucumbers, peeled and diced
  • 1-3 green Tai, Serrano, or cayenne chiles, chopped
  • juice of two limes
  • one quarter cup chopped cilantro
  • one tsp coarse sea salt
  • 1 tsp black salt
  • 1 tsp red chile powder or cayanne

In a large bowl combine all ingredients and mix well. Serve immediately as a side to any dish, or serve with a side of chips as a quick and healthy salsa. Keep in mind that with the combination of lime and tomatoes, this salad does not have a long shelf-life.
